Our Story
Peaceful Belly was founded in 2002 by Clay and Josie Erskine. Both Clay and Josie are artists and farmers. Peaceful Belly is committed to growing the most wholesome food for southern Idaho. This is our home, our heart, and our community.
We specialize in growing hand-raised vegetables, herbs, flowers, and berries. We grow over 180 types of veggies, most of which are heirloom varieties.
We believe in creating a healthy and sustainable agricultural system with our farming. Our practices include using cover crops, compost, drip irrigation, and companion planting, and we never use GMO seeds.
Peaceful Belly is not just a farm or a Farm to Fork Cafe but a way of thinking. It is our little piece of paradise. Our entire family are artists and farmers. We do it all and love to share our creativity and passion with our community.
Clay Erskine grew up surrounded by the beauty of nature - his father was a National Park Service Ranger. Clay knew early in life that he needed to be outdoors while he worked. For his first career, Clay worked as a ski and snowboard instructor – something he still enjoys doing during the winters at Bogus Basin Mountain Recreation Area. Clay attended Boise State University and majored in biology. It was not until after he married Josie and traveled the world that he found his true love of farming. Clay is passionate about his soil, his plants, and his trade – so much so that when spring hits, Josie considers the farm his first wife, and she moves to second place!
Josie Erskine was born in Idaho and in Idaho she will die. Josie loves to get her hands dirty. Flowers excite her and the sight of rows of veggies makes her giddy. She always needs to activate her creative side and finds no better place than the garden and a kitchen to do so. She loves to cook and is passionate about creating elevated comfort food from produce from her farm.
Daisy and Tilly are the farmers’ daughters. The farm is a magical place for them, and they are always around to lend a helpful hand. Daisy is an artist who shares her mother’s love for musical theater and animals. Daisy is currently at the University of Idaho and the farm misses her so much. Tilly is a born leader with an engineer’s mind. She loves to help on the farm, especially if she gets to ride the tractor. Tilly has a green thumb and grows her own garden every season.
